Chickpea Flatbread [Recipe]

Chickpea Flatbread “Pizza” Crust

  • 1 cup chickpea flour
  • 1 1/3 cups water
  • 2 Tablespoons extra virgin olive oil
  • Salt and pepper
Directions
Preheat oven to 450 degrees Fahrenheit

Pour 1-1/3 cups water into a medium bowl and slowly whisk in the chickpea flour.  Add salt and pepper and allow it to stand at room temperature for as long as possible, at least 30 minutes.

Heat a 10 inch, oven safe cast iron skillet on medium high heat.  Add in 2 Tablespoons extra virgin olive oil then pour in the chickpea batter and allow it to cook for about 30-60 seconds until the edges harden.  Do not flip.

Place skillet in oven for about 25 minutes, until crisp around the edges and light golden brown.
