Delicious macrobiotic style lunch

Delicious macrobiotic style lunch! Made a giant pot of Nishime, a traditional macrobiotic dish of stewed vegetables slowly cooked in a little water. When you cook your veggies this way they become sweet and buttery soft and are warming and grounding for your body. Directions:In a big pot add about an inch or two of water and set on high. Chop veggies. Layer them into the pot from densest to lightest - squashes and yams on the bottom to onions and Brussels or broccoli on top for example. Lower the temperature to mid-low heat and cover. Cook until veggies are soft, about 10-30 min depending on veggies and how patient you are. Check once or twice to make sure you don't need to add more water to pot. Serve with toppings of choice - here I used sea salt, unrefined sesame oil and tamari and added a boiled eggy!
