Bone Broth Egg Drop Soup

You guys have heard me rave about the benefits of bone broth before! This soup is so easy and is great for a breakfast (a nice break from sweet stuff!), lunch, or dinner! I love having it when I need something satisfying, grounding and simple.

Ingredients:

  • 3-4 cups of bone broth
  • 2 large handfuls of baby spinach or other green of choice
  • 2 eggs
  • splash of tamari (gluten-free soy sauce)
  • toppings of choice: scallions, cilantro, freshly grated ginger and/or garlic

Directions:

  1. Heat broth in a saucepan over medium heat.
  2. Crack 2 eggs directly in the pot and whisk with a fork and continue to cook stirring a few times.
  3. Stir in greens, tamari, and any toppings of choice. Enjoy immediately!
