Healthy Coconut Chewies Recipe

I love this healthy coconut recipe. Read on for why coconut makes for a great dessert ingredient: 

Chocolate Chip, Mint, Cinnamon Spice, Raspberry Lemon

A cross between a cookie and a macaroon, these are always a party favorite. Coconut is full of nutrients and healthy fats your body uses to power up. The healthy fat will help keep you full and satisfied for much longer than a traditional macaroon or cookie. Sometimes I’ll even whip up all four flavors and make a tray!

MAKES 10 TO 14 CHEWIES

BASE RECIPE INGREDIENTS

  • 2 egg whites
  • 1⁄4 cup coconut sugar
  • 2 teaspoons vanilla extract
  • Pinch of sea salt
  • 1 cup shredded, unsweetened coconut

CHOCOLATE CHIP

  • 1⁄4 cup dark chocolate bits (at least 70% cacao)

MINT

  • 2 to 4 drops peppermint oil
  • 1⁄4 cup dark chocolate bits (at least 70% cacao), optional if you want a mint chocolate chip version!

CINNAMON SPICE

  • 1 teaspoon ground cinnamon
  • 1 tablespoon ground flax meal
  • 1⁄4 teaspoon ground ginger
  • Pinch cayenne pepper

LEMON RASPBERRY

  • 1⁄4 cup frozen raspberries, defrosted
  • 1 lemon, zested and juiced

Directions:

  1. Preheat the oven to 325°F.
  2. Whisk the egg whites until totally frothy in a large bowl.
  3. Add the sugar, vanilla, and sea salt. Mix well.
  4. Fold in the coconut and chocolate chips and any other ingredients if making different versions.
  5. Drop tablespoon-sized balls on a baking sheet lined with parchment paper. Keep the chewies round; do not flatten them.
  6. Bake for 20 minutes, until you see a hint of brown on the tops. Allow them to cool completely before diving in. Serve immediately or store in refrigerator.
