Epic Summer Salad

This epic summer salad was the most epic of all the epic summer salads. Plus every single ingredient was from my CSA farmshare! Those yummy discs on top are sliced zucchini dipped in egg, rolled in almond flour and sautéed in coconut oil. Dressing is a simple Dijon mustard, balsamic and olive oil. Salad ingredients - sautéed string beans, heirloom tomatoes, raw corn, basil and Bibb lettuce. Epic. Summer. Salad.
