Forget Taco Tuesday, I’m a fan of making tacos any day of the week. Health-ify this summer favorite with the below Taco Slaw recipe. It’s perfect for BBQ’s because it can handle a little heat and sit out if needed. All you have to do is add your favorite protein and serve in a gluten-free tortilla {I love Siete Foods!} and you’re ready to go. Oh, and don’t forget the sauerkraut to make it extra gut-friendly!

INGREDIENTS:
– 2 cups sliced red cabbage
– 1/2 cup diced cucumber
– 1/2 cup diced tomatoes
– 1/4 cup chopped cilantro
– 1/4 cup finely chopped red onion
– 1/2 – 1 tsp. Mexican seasoning
– 1-2 limes, juiced (depending on how juicy they are!)
– 1/4 – 1/2 cup sauerkraut
– sea salt to taste
RECIPE:
Mix all ingredients together and allow slaw to marinate for 20 minutes before serving.
