My Favorite Chocolate Chip Mini-Muffin Recipe

Mornings can be tough, getting up and getting the kids to school is a lot for this often overwhelmed mama. I’ve learned though that having a go-to easy breakfast that the kiddos love makes mornings a lot easier. I was looking for an exact copycat recipe of those mini bagged muffins, and of course Rachel Mansfield to the rescue. This is her exact recipe but I wanted to share it with all of you too. Ingredients:
- 1 egg (flax egg should work too)
- 1¼ cups non-dairy milk
- ½ cup coconut sugar
- 2 teaspoons vanilla extract
- ⅓ cup butter (or use vegan butter)
- 2 cups gluten-free all-purpose flour or oat flour
- 2 teaspoons baking powder
- 1/2 cup dark chocolate chips
Instructions:
- Preheat oven to 350 degrees and line a mini muffin tray with liners and/or spray/grease well
- Melt the butter and set aside to cool
- In a large bowl, mix together egg, milk, coconut sugar, butter and vanilla until smooth
- Mix in flour and baking powder until combined
- Fold in chocolate and add about 1-2 tablespoons of batter to each muffin hole so they’re 3/4 full
- Bake in oven for 15 minutes and allow them to cool for a few minutes then enjoy!
