Recipe time! Today I’m sharing a few easy and delicious recipes for taking advantage of all that beautiful summer produce.
Here are a few summer faves my family loves to make:
Roasted Watermelon Gazpacho – Vine-ripened tomatoes, watermelon, lime juice, cucumbers, so refreshing. An added bonus? It works from the inside out to protect your skin from sun damage!
Warm Chickpea & Arugula Salad – Don’t discount this one for summer, even if it does mention the word “warm.” This salad is a light and refreshing with cool, crisp greens and the warm chickpea element. Yum! It’s also great with a dollop of homemade guacamole on top.
Sweet Potato Chips – I love making a batch of these to bring to a party for a healthier chip option.
Minty Cucumber Salad– This minty fresh recipe is perfect for a cool summer evening when you’re not in the mood to spend time in a hot kitchen.
