Pumpkin Pie Overnight Oats

Serves 1

Ingredients:

  • ½ rolled oats
  • ¼ cup pumpkin puree
  • 1 cup non-dairy milk
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • ½ teaspoon pumpkin spice
  • 1 scoop collagen powder (optional)
  • Toppings: Sprouted pumpkin seeds, sliced banana, cinnamon

Directions:

  1. Add all ingredients (except toppings) to a glass container and stir
  2. Cover and refrigerate overnight
  3. Add toppings and serve chilled or room temperature
