Quick Pickled Red Cabbage Salad

Cabbage contains insoluble fiber which helps move your digestive system along, and apple cider vinegar has been shown to lower blood sugar (help balance your system after that second slice of pumpkin pie). This dish is great on its own or served with a side of seared tempeh or fish.

Ingredients:

  • Half a head of red cabbage, shredded
  • ¼ red onion, sliced
  • 1⁄4 to 1⁄2 cup apple cider vinegar (enough to cover cabbage)
  • 1 apple, diced
  • ½ cup raw walnuts
  • fresh herbs or greens of choice: arugula, parsley, baby spinach
  • freshly ground black pepper

Directions:

  1. Place shredded cabbage and red onion in a large bowl and cover with apple cider vinegar. Let this hang out for at least 30 minutes (up to a few hours).
  2. Before serving, toss cabbage and onion mixture with diced apple, walnuts, and greens and season with black pepper and salt to taste.
