Quinoa and Bean Salad with Mango

Need a fun new way to eat your quinoa? This quinoa salad is so beautiful and absolutely delicious. It’s the perfect dish to make for weekday lunches as well.

Quinoa and Bean Salad with Mango

Ingredients:

  • 1 mango, peeled and cubed
  • 1 red bell pepper, seed and diced
  • 1 cup chopped scallions
  • 1 cup chopped cilantro (I have made this with and without, your choice)
  • 2 tbsp red wine vinegar
  • 1 tbsp mirin
  • 2 tbsp olive oil
  • Sea salt to taste
  • 2 cups cooked quinoa
  • 15 oz cooked black beans

Directions:

1. Fold everything together

2. Allow to sit in the refrigerator for a few hours so the flavors meld.
