Spiced Carrot Soup 2.0

Blended veggie soups are one of my favorite things to meal prep because they’re so easy and so good for your gut. This simple recipe highlights naturally sweet root vegetables, which can help curb sugar cravings….and New Chapter Fermented Turmeric Booster Powder! Spicy Carrot Turmeric Soup (Using Fermented Turmeric)

Ingredients:

  • 3 tablespoons olive or coconut oil
  • 1 large onion, quartered
  • 1⁄2 teaspoon sea salt, plus more for seasoning
  • Freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 serving of New Chapter Fermented Turmeric Booster Powder
  • 1 tablespoon grated fresh ginger, or 1 teaspoon ground ginger
  • 8 to 10 carrots, chopped into chunks
  • 3 parsnips, peeled and chopped into chunks 1⁄4 teaspoon ground cinnamon
  • 4 cups bone broth or broth of your choice

Directions: 

  1. In a large pot, heat 2 tablespoons of the oil over medium heat
  2. Add the onion, season with a little salt and pepper, and cook, stirring, until translucent, about 7 minutes
  3. Add the remaining 1 tablespoon oil, the garlic, turmeric powder, and ginger, and reduce the heat to low
  4. Season with pepper and cook until the garlic is browned. Add the carrots, parsnips, cinnamon, and salt to taste
  5. Add the bone broth and 2 cups water (if you do not have bone broth, you can use all water) and bring to a boil. Reduce the heat to maintain a simmer and cook for 20 minutes
  6. Blend the soup directly in the pot with an immersion blender until smooth (or transfer to a regular blender and carefully puree until smooth—be careful when blending hot liquids)
  7. Ladle or pour into bowls. Top with toasted hazelnuts, spiced chickpeas, and/or fresh thyme
