Summer recipe roundup {no oven required}

The last few days it’s actually felt like summer here in NYC. While I love all the beautiful fresh produce this season has to offer, I don’t love turning on my oven to cook it!

Today I’m sharing some delicious seasonal recipes that don’t require an oven. And while I know recipes are nice, I also know the power of seeing something made from start to finish which is why I will be making one of these recipes on LIVE on Facebook this Thursday (6/15) at 4:30PM EST. Details on what I’ll be making and how to join are below!

Here are the seasonal recipes that caught my eye this week:

  • Shrimp Ceviche – Ceviche is raw fish “cooked” in citrus juice. It’s super easy to pull together and a perfect cool dish for hot summer nights. Try serving atop a salad or with guacamole in gluten free tortillas.
  • Lemon Broccoli Pasta Skillet – This simple and delicious pasta dish can be served hot, or cold. I suggest using brown rice or bean pasta to boost the protein in this dish and make it more of a complete meal.
  • Crockpot Chicken Fajitas – Crockpot recipes are great year round, but these chicken fajitas have summer written all over them, especially when served with a healthified margarita 😉
  • Burgers from Go with Your Gut – If you haven’t tried these burgers yet, what are you waiting for?? I especially love the salmon version for a lighter summer dinner.  
  • Blueberry Quinoa Salad – My secret to the best salads ever? Add blueberries. Seriously, I could eat this salad {+ goat cheese!} every day of the summer and not get sick of it. It’s that good!
