I was given a challenge.
Take my favorite dish at the diner (I love me a good diner, I grew up on Long Island after all), healthify it, make it vegetarian AND make it something that EVERYONE will absolutely freak over.
Something so delicious men will even want to cook it.
And I’m happy to say this baby is just that.
My friend and fermentationist, Summer Bock and I put our thinking caps on and came up with one of the most delicious recipes I’ve ever tasted. I swear this one needs to sweep the nation, STAT.
I present to you (along with the amazing people at Well.org)…
The Tempeh Reuben Salad
Ingredients:
Mayonaise
Ketchup
Sauerkraut brine
Mixed greens
Tempeh
Raw unfiltered apple cider vinegar
Grade B maple syrup
Tamari
Caraway seeds
To make the dressing
Mix the mayonnaise and ketchup together
Pour in a little sauerkraut brine
For the salad:
First, marinate the tempeh in raw unfiltered apple cider, Grade B maple syrup and tamari
Sear the marinated tempeh
Then add salt and pepper to taste
Put the seared tempeh croutons on top of the bed of mixed greens.
Add sauerkraut on top
Sprinkle in caraway seeds (this is traditional reuben flavor)
Mix ingredients together with Russian dressing.
Feel free to add in a cheese of your choice, I suggest an organic raw cheddar or a swiss goat cheese
