Perfect Peak Summer Recipes

Welcome to the best of the blog series! We’re going to jump into some of my favorite posts (like these summer recipes!) to help you make the most of your summer.

Summer Recipes

Right now is the best time of year to visit your local farmers’ market. Sure, you can grab something fresh all year long, but summer is when the goods really roll in!

Also, a note for me and a note for you, I want to encourage us to set time aside for ourselves and our loved ones this weekend. Weekends seem to go so fast so I love to set that intention on a Friday and tune into what we need most. Whether that’s a catch up call, a morning in bed, a real activity on the calendar, decide now what you want to commit to (or let go of!). 

Since yummy and easy food is always on my family’s list, here are a few summer faves to make: 

Roasted Watermelon Gazpacho – Yes, you read that right. This thing screams summer: vine-ripened tomatoes, watermelon, lime juice, cucumbers. An added bonus? It works from the inside out to protect your skin from sun damage!

Warm Chickpea & Arugula Salad – Don’t discount this one for summer, even if it does mention the word “warm.” This salad is a light and refreshing one that will delight you with the cool, crisp greens and the warm chickpea element. Yum! It’s also great with a dollop of homemade guacamole on top.

Healthy Huevos Rancheros – Gathering with friends outside again? The different parts of this recipe are so simple to make (you can handle eggs and beans, right?) but when you set it up with a DIY topping bar you’ll really hit a home run.
