Time to hit the farmers’ market! [New recipes for you to try]

We’re approaching the best time of year to visit your local farmers’ market. Sure, you can grab something fresh all year long, but the start of summer is when the goods really roll in!

I want to encourage you to set time aside for yourself and your loved ones this weekend. Cook and enjoy each other’s company. And to help you out, I’m sharing three out-of-this-world recipes you might have missed on the blog recently. (Share this!)

Roasted Watermelon Gazpacho – Yes, you read that right. This thing screams summer: vine ripened tomatoes, watermelon, lime juice, cucumbers. An added bonus? It works from the inside out to protect your skin from sun damage!

Warm Chickpea & Arugula Salad – Don’t discount this one for summer, even if it does mention the word “warm.” This salad is a light and refreshing one that will delight you with the cool, crisp greens and the warm chickpea element. Yum! It’s also great with a dollop of homemade guacamole on top.

Healthy Huevos Rancheros – Hosting a brunch? The different parts of this recipe are so simple to make (you can handle eggs and beans, right?) but when you set it up with a DIY topping bar you’ll really hit a home run.
