Upgraded Avocado Toast

My favorite, “upgraded” and gut healthty avocado toast

Probably my favorite snack, I call this ingredient combo my “brain bowl.” This was my go-to fuel while working on my book! With brain fueling healthy fat from the avocado, it kept me clear and energized for hours when I couldn’t stop for a full meal. It’s perfect as a filling snack or mini meal – I love serving this kraut snack on gluten free bread as an “upgraded” avocado toast. This is also a great little dish for my kraut newbies; the avocado really mellows its flavor.

UPGRADED AVOCADO TOASTavocado toast sauerkraut

Makes 1 serving

Ingredients:

  • Go with Your Gut Kraut Snack (recipe below)
  • 1-2 slices bread of choice

Directions:

  1. Toast bread.
  2. Top toasted bread with kraut snack and enjoy!

 

GO WITH YOUR GUT KRAUT SNACK

Makes 1 serving

Ingredients:

  • 1⁄4 to 1⁄2 cup sauerkraut of choice
  • 1⁄2 ripe avocado, cubed
  • Sprinkle of nutritional yeast
  • Drizzle of olive oil
  • Sprinkle of gomasio, optional
  • Sprinkle of sea salt on avocado, if needed

Directions:

  1. Layer a plate, bowl, or to-go container with your kraut as a base, then add the remaining ingredients on top and eat!
