Go with Your Gut Fudgy Brownie with Protein Powder

I’m so excited to have partnered with my friends at New Chapter for this delicious recipe!

Navy loooves being in the kitchen with me and cooking and baking most days (just watch our weekly IG stories!). Even with all the quinoa and Power Parfaits she eats on the regular, she is still a total sweet and treat girl. Chocolate is her #1 love so I thought it would be great to create a brownie recipe that’s Navy and mama approved. These extra fudgy dense brownies are rich, and I love that there’s some veggies in there!

This upgraded brownie is high in protein thanks to the addition of New Chapter’s Complete Organic Plant Protein+ in chocolate, naturally sweetened, and with a hidden serving of vegetables (I promise you won’t even know there’s zucchini in there!). Plus Navy was into the grating and squeezing of this neutral vegetable.

Recipe: 

Ingredients:

  • 2 scoops New Chapter’s Complete Organic Plant Protein+, chocolate
  • 1/2 cup almond flour 
  • 1 1/2 cups peeled and grated zucchini (about 2 large zucchinis)
  • 1 cup nut butter (almond, cashew or even natural peanut butter!)
  • 4 tablespoons raw cacao powder
  • 1/4 cup coconut sugar
  • 2 eggs 
  • 1 tablespoon coconut oil 
  • 1/4 cup maple syrup 
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 3/4 cup chocolate chips or chunks (I love those sweetened with coconut sugar or stevia) chunks work better for this recipe

Directions

    1. Preheat oven to 350 and line a 9×9 baking pan with baking paper. 
    2. Remove moisture from grated zucchini using a kitchen towel. 
    3. Place all wet ingredients into a large mixing bowl and combine thoroughly (grated zucchini, nut butter, eggs, coconut oil, maple syrup, and vanilla extract).
    4. Add baking powder and sea salt and mix through.
    5. Stir in the New Chapter Complete Organic Plant Protein+, almond flour, raw cacao, and coconut sugar.
    6. Gently fold in the chocolate chunks. 
    7. Pour into prepared baking pan. 
    8. Bake for 25-30 minutes, or until a toothpick comes out clean. Cool, cut into squares and enjoy!

  • Brownies will stay fresh in an airtight container for about 3-4 days or can be frozen.
